I'd like to say that these are 'healthy' but I don't think I'll ever be capable of baking anything that's good for you, so instead I'll rave about the deliciousness of these bad boys.
The nuttiness of the tahini (omg how good is tahini am I right) and the sweetness of the honey is just so so so tantalising, and not only do the oats give everything a super comforting chewiness, but also a satisfying crunchy collar around each cookie as well. These are insanely easy to make, and you could really go all out with changing the recipe to suit your taste- think swapping in peanut butter, maple syrup, nuts, seeds or chocolate chips if you really want to go all out. The choc drizzle on these is optional, but it gives them such an amazing richness, so you'd be crazy not to add it. And by the way, I'm going to list the ingredients in cups here, because I just think it's a recipe that doesn't need accuracy (and it's easier to swap ingredients out easier with measuring cups I reckon).
Recipe- Makes 5 large cookies.
Ingredients
2/3 cup oat flour (I grounded up some roller oats with a mortar and pestle to make my own)
1/3 cup rolled oats
1/2 tsp baking soda
2 tbs wholemeal plain flour
1/3 shredded coconut
pinch of salt
1/3 cup tahini (I used unhulled)
1/4 cup honey
1 tsp vanilla essence
3 tbs olive oil
melted dark chocolate, to drizzle
Preheat oven to 190°C. Line a baking tray with baking paper.
In a mixing bowl, add the oat flour, rolled oats, baking soda, flour, coconut and salt, and whisk to combine. In a separate jug, combine the tahini, honey, vanilla and oil till smooth. Add tahini mixture to the dry ingredients and stir until a stiff dough forms.
Using slightly damp hands, roll golf ball sized spoons of cookie dough into balls, then place on the baking tray evenly spaced apart. Press down (they won't spread much) with your fingers or the bottom of a glass, then bake for 10 minutes, until golden around the edges. Leave to cool for 5-10 minutes until they firm up, then move to a wire rack. Drizzle melted dark chocolate over the top and leave to set before eating!
Note: if the dough seems awfully dry, and won't stick together, add a bit more oil, tahini or honey.
