They have oats in them... so they're healthy, right?
With two types of sugar and a generous amount of butter, I'll probably say no to these being nutritionally approved, BUT please please please try these if you're feeling up to a bit of baking. They have this insane crunchy-chewy ratio (so mathematically approved hehe), and the golden syrup makes these taste like the best Anzac biscuits you've had in your life. And don't get me started on the walnuts... but then again, I like anything with nuts in them (God help me if I ever develop a nut allergy).
Recipe- Makes around 15 cookies
Ingredients
100g caster sugar
70g golden syrup
100g butter
75g crushed/finely chopped walnuts
100g self raising flour
100g quick oats
1/2 tsp mixed spice
pinch of salt
Preheat oven to 180°C, and line 3 trays with baking paper.
In a small pot, melt together the sugar, golden syrup and butter until melted. Leave to cool while you prepare the dry ingredients.
Meanwhile, combine the nuts, flour, oats, mixed spice and salt. Add the butter mixture and fold in until combined.
Place in fridge for a couple of minutes to set the mixture a bit.
Roll heaped tablespoons of mixture into rough balls and place on the trays, leaving room in between the biscuits to spread.
Bake for 12-15 minutes or until golden.
Leave to cool for 10 minutes on the tray, then transfer to wire racks to full cool.
