Blueberry and Lime Custard Yoghurt 'Toast'

In the shape of a heart because all we 'knead' is love ;)

If you haven't been on Tiktok for a while, custard yoghurt toasts are basically pieces of bread, pressed down to make a lil dimple, filled with a eggy mixture and often baked/air fried. All is good and well, but things can always be made better- especially when there's fresh and fluffy bread dough in the mix. So instead of starting from already baked bread, I thought I could change things up and start from the very start. And instead of doing the usually 'lemon blueberry combo', I thought it would be nice to give lime a bit of a chance in baked goods for once, not just in a bowl of guacamole... (by the way, those yellow things in the photo are limes, they're just homegrown so they're not exactly the right shade of green ahah)



Recipe- Makes 1 <3

Ingredients

1/2 a batch of Basic White Bread Dough (see All Recipes), or any batch of bread dough

2 eggs

4 tbs greek yoghurt

1 tsp lime zest

juice of 1 lime

3 tbs caster sugar

1/3 cup frozen blueberries

icing sugar, to dust


Preheat oven to 180°C, and line a circular pan with baking paper.


In a small bowl, whisk together the eggs, yoghurt, lime zest, juice and caster sugar until smooth. Leave to the side.


Roll the bread dough into a rough circle around 3ocm in diameter. Pinch the top over into the middle, so you get a vague heart shape. Using your finger, poke a border running around the outside, so that the bread dough is thicker around the outside and thinner in the middle (this will keep your custard from running away). Use a fork to poke a few holes in the thinner part of the heart, so that it won't bubble up as much.


Transfer the heart to the lined baking tray.


Pour the custard mixture into the heart, keeping it within the borders. Spread it out evenly, then scatter the blueberries over the top.


Bake for 30 minutes or so, until the border has become golden and the custard is set with the slightest wobble.


Leave to cool, then dust with icing sugar.
