I think it's just one of life's biggest questions- why is banana bread so so so so good?
Add some chocolate chips, as well as a generous helping of sweetness and spice (and everything nice), and you've got one of the best baked goods out there. I have been in a bit of a banana bread slump recently, not really being happy with the ones I made, but this recipe... I've only made it once but I know it's going to be a go-to when we've got a bowl of brown bananas. The treacle is unassuming at first but gives this beautiful molasses-y colour to the batter, and combined with the mixed spice, makes it as comforting as your fave pair of slippers. And best of all, it's so easy you could make it in your sleep, and makes a nice small loaf to last you a few days for a snack.
Recipe- Makes 1 loaf
Ingredients
2 medium over-ripe bananas, mashed
30g olive oil
40g maple syrup
2 tbs treacle
1 egg
70g self-raising flour
35g wholemeal self-raising flour
1 tsp bicarb soda
pinch of salt
large handful of chocolate chips
Preheat oven to 180°C. Line a smallish loaf tin with baking paper.
Mash banana until smooth. Add oil, maple syrup, treacle and egg, and whisk until smooth.
In another bowl, combine the flours, bicarb and salt. Add wet mixture and mix until just combined
Scrape into lined tin, and sprinkle with your chosen amount of chocolate chips.
Bake for 30 minutes or until deep golden and a skewer inserted comes out clean.
Cool in tin for 5 minutes, then transfer to a wire rack. Eat warm!
