Brookie Cookie Cake

What do you get when you smoosh together a brownie and choc chip cookie and bake it like a cake? this thing.

Why bother rolling out balls of cookie dough and baking a slab of brownies when you can do it all in one? I know I say this about every recipe but this one is legit the best (evidence: I ate a quarter and a bit of this in one day. Obviously it was gone in less than 24 hours). Super smoodgy and chewy, with molten lava bombs of chocolate, and bittersweet cocoa echoing through the brownie batter. I had to pick my jaw off the floor... it's just that good


Recipe- Makes around 12 slices

Ingredients

150g butter

110g brown sugar

75g white sugar

2 tsp vanilla essence

1 egg

150g plain flour

1 tsp baking soda

100g chocolate chips

20g cocoa

pinch of salt

extra choc chips, for top


Preheat oven to 180°C. Line a 20cm round cake tin with baking paper.


Melt the butter so that half of it is liquid and half is still solid yet squidgy. Add the brown and white sugar, and whisk together to emulsify. Add the vanilla and egg and whisk for 30 seconds to a minute until all is incorporated and the mixture is a touch lighter. Split mixture into two separate bowls.


In one bowl, add 100g of flour, 1/2 tsp baking soda and all of the choc chips, as well as a pinch of salt. Mix until all combined.


In another bowl, add the remaining flour, baking soda and all the cocoa, as well as a pinch of salt. Mix until combined.


Spoon chunks of dough haphazardly into the cake tin, alternating between the cookie and brownie mix (you want a marbled, hodge-podge kinda effect). Press down into the tin, flatten, then sprinkle over some extra choc chips.


Bake for 25-30 minutes, or until the outer edges are starting to crunch up but the middle is still smoodgy. You might have to use some gut instinct with this one, because it hardens up a little after cooling, so just take it out when you think is right.


Cut in to slices and eat while warm.
