I feel like the flavour combination of chocolate and lime deserves it's own TV show because it always makes things taste so more complex and gourmet than they actually are.
The cookies have a brownie-like texture to them, but remember to be quite heavy handed with the icing sugar before you bake them, because it has the tendency to just dissolve into the cookie during it's time in the oven if there's not enough of it.
Recipe- makes 15-20 cookies
Ingredients
165g caster sugar
80g unsalted butter, melted
2 eggs
1 tsp vanilla extract
1 tsp lime zest (around the zest of 1 lime)
150g plain flour
40g cocoa
50g almond meal
1 tsp baking powder
For coating-
1- 1 1/2 cup icing sugar
Combine the butter, sugar, eggs, vanilla and lime zest together and whisk till smooth. Add the rest of the ingredients and mix until a smooth dough forms. Refrigerate for at least 30 minutes, or until firm.
Preheat oven to 180°C, or 350°F and line 3 baking trays with baking paper. Place icing sugar in a bowl, ready to roll your cookies in.
Take a heaped tablespoon of dough and roll it into a ball, then coat it thickly in the icing sugar. Place on the baking tray, and press down slightly. Repeat with the mixture, then bake cookies for 12-15 minutes, or until cookies have cracked and move easily around the tray if you gently push them.
Cool on trays for 5 minutes then transfer to a cooling rack .
