I know there is already a 'banana bread' themed recipe on this website, but hopefully you'll make an exception for these, because they are absolutely delicious.
Like a warm hug, their cakey and squidgy texture is very comforting, and the combination of the banana in the cookies and the chocolate on top is a match made in heaven.
Recipe- makes 15-20 cookies
Ingredients
125g unsalted butter, softened
110g brown sugar
50g caster sugar
1 egg
80g rolled oats
70g plain flour
70g wholemeal plain flour
1 banana, mashed
To decorate-
100g dark chocolate
In the bowl of a stand mixer, cream together the butter and both sugars till creamy (you don’t need it to become too pale). Add the egg, then beat for a couple of minutes until well combined. Add the rest of the ingredients, except for the dark chocolate, and mix until just combined. Pop the bowl into the fridge for at least 30 minutes.
Preheat oven to 180°C, or 350°F and line 3 baking trays with baking paper.
Roll tablespoon sized balls of the dough and place onto prepared trays, leaving 5 cm in between each ball. Press down to slightly flatten then bake for 12-14 minutes, or until golden.
Leave on the trays to cool for 5 minutes then move to a cooling rack.
To decorate, melt the chocolate then drizzle over cookies. Leave to set for a couple of minutes before serving.
