I'm a big fan of granola- I'd take it over a boring bowl of cornflakes any day. But I don't mean those boring old ones with dried fruit and dry bits of bran. I like the ones with big crunchy clusters of nuts, oats and coconut that hold bags of flavour.
And this granola is just that! With the warm, spicy notes of a good piece of banana bread, and toasty flavours from the pecans, it seems almost illegal to have it for breakfast... (just almost).
Recipe-
Ingredients
1 overripe banana
85g liquid sweetener (such as maple syrup, honey, rice malt syrup etc)
2 tbs peanut butter
1 tsp cinnamon
½ tsp vanilla essence
150g rolled oats
25g shredded coconut
40g pecans
Preheat oven to 180°C, or 350°F. Lightly grease a high sided baking tray.
Mash the banana with the syrup, peanut butter, cinnamon and vanilla in a mixing bowl. Once smooth, add the rest of the ingredients and toss to combine.
Pour out into a high sided baking tray and bake for 25-30 minutes, tossing the granola every 10 minutes, until golden brown.
Leave to cool in the tray, then store in an airtight container.
