Mini Cheesymite Loaves

Vegemite + cheese + carbs= deliciousness. This is the classic combo but with a bit more fun, because anything mini is just 10x more cute (sorry that this recipe is like the 4th or 5th 'mini' thing on this website).

I know that probably not everyone likes Vegemite, or has it accessible, so this recipe might just be for the Aussies out there.



Recipe- makes 6 mini loaves

Ingredients

1 batch of white bread dough

100g grated pizza cheese (the mix of tasty, mozzarella and parmesan cheese)

approx. 50g butter

Vegemite (amount depends on how spicy you like things)

Grease a 6 hold mini loaf tin.


After your bread dough has had its first rise, knock it down and turn out onto the bench. Roll out into a large rectangle- around 40cm long, 15cm wide. With the long side facing you, spread butter horizontally along half of the rectangle, then spread Vegemite over the top. Sprinkle grated cheese over the top, then fold the upper half of the bread dough over the filling. Slice the rectangle of bread dough into 30 squarish pieces.


Take one piece and push it into one holes in the tin, placing it at one end. Arrange 4 more squares of dough in the tin, pushing them up against each other. Repeat to fill the other holes in the tin. Leave to rise for 20 minutes.


Meanwhile, preheat oven to 190°C, or 375°F.


After loaves have risen slightly, bake for 30-35 minutes, or until golden brown. Leave to cool in tins for 10 minutes, then transfer to a wire rack.
